Skinny BBQ Chicken Flatbread

Ingredients:

  • 1 pound boneless skinless chicken breasts 
  • 4 light original flavor flatbreads 
  • 1 cup low-sugar barbecue sauce
  • 1/3 cup black beans
  • 1/4 cup canned corn
  • 1/4 cup salsa 
  • 1 cup reduced-fat mild cheddar shredded cheese 

Instructions:

To poach the chicken:

  1. Place the chicken breasts in a large pot and cover with two inches of water or stock
  2. Add two bay leaves, fresh parsley, and whole peppercorns to flavor
  3. Bring to boil over high heat, cover & reduce heat to low
  4. Simmer the chicken for 10-15 minutes
  5. Remove chicken with tongs. Once cool, shred & set aside

To assemble flatbread:

  • Preheat oven to 350 degrees F
  • Bake flatbread on baking sheet until slightly crisp, 2-3 minutes
  • Mix beans, corn, and salsa in a medium bowl
  • Remove flatbread from oven and top each evenly with:
- 3/4 cup shredded chicken
- 1/4 cup barbecue sauce
- 1/2 cup bean mixture
- 1/4 cup shredded cheese
    • Place flatbreads back into the oven and bake until cheese melts and ingredients are warmed through, 6-8 minutes
