I absolutely love working with Highlands College (www.instagram.com/highlandscollege). It is a wonderful institution that is birthed by Church of the Highlands. Once a month we have the privilege of cooking for a Preview Day at the College. This is where prospective students and their parents come in to tour the college and meet all the staff. We feed them lunch before they end the day in the chapel service.
This week we cooked for 270 students and parents. We tried out some new items and the feedback we received was wonderful.
We did a cold Orzo and Veggie Salad with a homemade lemon dressing.
Next we did a zucchini and tomato bake: thick sliced tomatoes and zucchini seasoned with our in house seasoning and a little bit of parmesan cheese.
We followed that up with some of our traditional roasted broccoli then finished with a seared and baked Chicken Parmesan.
All of the new students loved it and the staff who has eaten our food many times before loved the change we had for them.
