1. Easy Weeknight Pulled Pork Sliders

Don’t underestimate these shredded-pork sliders just because they’re small. These bite-sized sandwiches pack a lot of flavor! Whether you’re looking for finger-food snacks or a well-balanced meal, these sliders take no effort and will save so much time! 

 

Pulled Pork Slider with Pickles

 

Yield: 6-10

Total Time: 10 minutes

Ingredients

Horseradish Dill Coleslaw

  • 1 bag fresh coleslaw mix
  • ¼ cup mayonnaise 
  • 3 tablespoons horseradish cream
  • 2 tablespoons white vinegar
  • 1 tablespoon Dijon mustard
  • 1 tbsp chopped dill

Sliders

  • 4-6 pounds Boston Butt
  • 4 tablespoons barbecue sauce
  • sliced pickles
  • sliced potato roll sliders (or gluten free buns)

Directions

  1. Mix all coleslaw ingredients in a medium bowl.
  2. Shred meat and toss in your choice of barbecue sauce. 
  3. Serve with buns, coleslaw, pickles.

Notes

  • For an even easier recipe, stick with traditional coleslaw for a sweeter slider!

2. Fresh Korean BBQ Tacos

Korean BBQ Tacos

 These tacos are the perfect match for Mealfit’s Boston Butt! The sweet and sour taste of kimchi, Korean BBQ sauce, and cherry wood smoked pork is a mouthwatering masterpiece that will leave you wondering why you didn't make more!


Korean BBQ Sauce

Servings: 6

Total Time: 10-15 minutes

Ingredients

  • 4-6 pounds Boston Butt (shredded)
  • 1 package corn tortillas
  • 1 cup Mexican shredded cheese 
  • ½ cup diced green onions green part only
  • Sesame seeds (for garnishing)

Korean BBQ Sauce

  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 1 garlic clove, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon ground ginger
  • ¼ teaspoon pepper
  • 2 teaspoon chili paste
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Kimchi

  • 6 cups shredded cabbage 16 oz bag of store-bought works great!
  • 3 tablespoons canola oil
  • 6 tablespoons rice vinegar
  • 2 teaspoons chili paste 
  • ½ teaspoon ground ginger 
  • 3 tablespoons sugar
  • 1 ½ teaspoon sesame oil
  • Salt and pepper to taste

Directions

Korean BBQ Sauce

  1. Combine soy sauce, brown sugar, garlic, rice vinegar, sesame oil, ginger, pepper, and chili paste in a skillet over medium heat. In a small bowl, dissolve cornstarch in water. Once the sauce mixture reaches a boil, stir in the water-cornstarch mixture and continue to boil for about 2 minutes until sauce thickens. Remove from heat and set aside. 

Quick Kimchi

  1. Combine canola oil, rice vinegar, chili paste, ginger, sugar, and sesame oil in a small bowl and mix. In a large bowl, place shredded cabbage and top with the sauce mixture. Toss until evenly coated and set aside.

Tortillas

  1. Dampen a paper towel (not too wet, you don’t want it to be dripping) and wrap a corn tortilla inside. Place on a microwave safe dish and repeat for each tortilla. Microwave plate for 2 minutes or until tortillas are hot. 
  2. Unwrap tortillas and layer meat, BBQ sauce, cheese, and kimchi. Garnish with sesame seeds and green onions and serve. 

3. Savory Southwest Salad

 Need something a little more fresh that still fills you up? How about this perfect medley of Western tang and Southern charm? This simple salad, inspired by Jim n Nick’s staple pulled-pork salad, made using Mealfit’s tender Boston Butt will leave you smiling and satisfied, guaranteed!


Savory Southwest Salad

 Servings: 4

Total Time: 20 minutes

Ingredients

  •  5 oz salad mix or mixed greens
  • 1 cup green leaf lettuce, shredded or chopped
  • 1 cup Boston Butt, shredded
  • 1 cup grape tomatoes, halved
  • 1 cup croutons
  • ½ cup cucumber, diced
  • ½ cup cheddar cheese, shredded
  • ½ cup toasted slivered almonds
  • 4 slices bacon, crumbled (optional)

Directions

  1. Scatter almonds on a baking sheet and broil in oven for about 5 minutes. Remove and let cool. (If adding bacon, crispin bacon and drain on paper towels until cooled).
  2. In a large bowl, combine lettuce, tomatoes, cucumbers, cheese, and almonds. 
  3. Warm pulled pork in oven or microwave, add to salad mix and toss salad. Top with croutons (and bacon). Drizzle ranch dressing barbecue sauce and serve.

4. Simple Sheet-Pan Pulled Pork Nachos

 Who could resist that heavenly crunch of loaded nachos? With Mealfit’s Boston Butt, you can make it even more divine in just a few, easy steps!


Pulled Pork Nachos

Servings: 12

Total Time: 20 minutes

Ingredients

  • 4-6 pounds Boston Butt, shredded
  • 1 bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 cup tomatoes, diced
  • 1 can black beans, rinsed and drained
  • 1 can corn, rinsed and drained
  • 1 avocado, cubed
  • ¼ cup pickled jalapenos
  • 1 cup BBQ sauce
  • 1 cup sour cream
  • 2 tablespoons chopped cilantro to garnish

Directions

  1. Preheat oven to 350°F. In a cast-iron skillet, line tortilla ships along bottom of skillet. Place a layer of pulled pork and top with both cheeses and repeat. 
  2. Bake in oven for about 10 minutes or until cheese is melted.
  3. Remove from oven and layer with tomatoes, beans, corn, avocado, and jalapeños. Drizzle nachos with BBQ and sour cream and garnish with chopped cilantro. Top with any leftover pork or cheese and serve.
