Black Bean & Roasted Sweet Potato Quesadillas


  • 1 lb Roasted Sweet Potatoes
  • 4 White Flour Tortilla Wraps
  • 1 tsp Smoked Paprika
  • 1 tsp Cumin
  • 1/2 tsp Ground Coriander
  • 1/4 tsp Cayenne Pepper 
  • 8oz. of Black Beans
  • 2 Large handfuls of Cheddar
  • Juice from 1/2 a Lime
  • Salt & Black Pepper, to taste
  • Olive Oil 


  1. Lightly smash roasted sweet potatoes. 
  2. Oil one side of a tortilla wrap and place it oil side down on a pan with the heat off. Spread over sweet potato.
  3. Add black beans.
  4. Add cheese.
  5. Add tortilla wrap on top, brush with oil and turn on heat. Fry both sides until golden.

Add your favorite toppings or eat straight off the stove.
