Bruschetta Chicken with Balsamic Glaze


2 lb. Grilled Chicken

Bruschetta Topping

  • 2 Roma Tomatoes diced
  • 1 clove garlic minced
  • 1/4 cup Basil chopped
  • 2 Tbls red onion finely diced
  • 1 tsp salt
  • 1/2 tsp Pepper
  • 1 Tbls Avocado Oil

Balsamic Glaze

  • 1 Cup Balsamic Vinegar
  • 2 Tbls Honey



  • Heat Smoked Chicken to desired temperature


  • Combine all the ingredients into a small container and store in the fridge until ready to serve

Balsamic Glaze

  • Pour the vinegar and honey into a small saucepan and bring to a boil, then reduce to simmer. Let the liquid reduce to about half. It should be thick but still pour-able. Set aside to cool
  • Remove chicken from pan and let rest on the cutting board for 5-10 minutes. Top with bruschetta and drizzle with the balsamic glaze.
