St. Patrick's Day Recipe - Homemade Sheppards Pie

In honor of St. Patrick's Day, we are sharing a bonus recipe this week, introducing this tasty Homemade Sheppards Pie - the ultimate comfort-food! A delicious filling with lots of meaty gravy underneath a fluffy layer of mashed potatoes – perfect for a cozy night in, or as a special St. Patrick’s Day treat.

Here is how to make it:

 

 

Ingredients:

- 1 tbsp oil

- 1 lb ground beef 

- 1 clove garlic, chopped

- 2 medium carrots, finely chopped

- 2 sticks celery, finely chopped

- 1 tsp salt 

- 1/2 tsp paprika

- black pepper to taste

- 2 tbsp flour

- 2 tbsp tomato paste (sub ketchup if desired)

- 1/3 cup red wine (use broth in place if desired) 

- 1 cup beef broth

- 1 cup frozen peas

- 1 tbsp parsley, chopped

- 1/2 tsp thyme, chopped

- 1 tsp rosemary, chopped

- 4 cups mashed potatoes

- 1/2 shredded cheddar cheese 

 

Instructions:

1. Brown the meat & veggies

heat oil over medium in your favorite deep skillet, brown the meat and veggies and do not be afraid to get some color on them for the best flavor

2. Deglaze the pan

sprinkle seasonings and flour over the pan, cook for 2-3 minutes stirring often. stir in tomato paste and cook, stirring constantly, for about 1 minute. pour in red wine, scratching any browned bits off of the bottom.

 

3. Finish stuffing and cool
stir in broth, herbs and peas, simmer 5 or so minutes and let all ingredients cool completely 
4. Prep mash
while your stuffing is cooling, make your favorite mashed potatoes. you need approximately 4 cups of mash on top of the casserole. 
5. Assemble and bake
preheat your oven to 400°F. spread the mashed potatoes over the cold filling in a 7"x11" baking dish. sprinkle with cheese and bake for 20 minutes, or until potatoes are golden brown
For the real backstory, it is important that you know that the Irish technical term for this recipe is "cottage pie" because it is made with ground beef. A true authentic Shepard's Pie is made with ground lamb. Both are so tasty and can be used with this exact recipe, depending on what you love and prefer in your household.
