Baked Chicken and Zucchini Casserole

Creamy chicken mixed with soft zucchini and topped with crispy stuffing… yum. This dish is sure to not only leave you stuffed, but it's also sure to fill your home with its delicious, cozy aroma! 

Prep Time: 10 minutes

Cook Time: 35-45 minutes

Total Time: 45-55 minutes

Yield: 6-8 servings


  • 1 small rotisserie chicken, pulled and shredded
  • 3 medium sized zucchinis, diced
  • 1 box Stove Top chicken stuffing mix
  • 1/2 cup butter, melted
  • 1 can cream of chicken soup
  • 1/2 cup sour cream


  1.  Preheat your oven to 350 degrees and prepare a 9x13 inch baking dish with grease. 
  2. In a large bowl, melt the butter and pour in the entire box of the dry stuffing mix. Combine until even and then divide in half. Set half of the mixture aside to be used later.  
  3. In the other half of the mixture, add the pulled chicken, diced zucchini, cream of chicken soup, and sour cream and mix well.
  4. Spread the mixture into the baking dish and sprinkle the leftover stuffing mixture in an even layer on top. 
  5. Place in the oven, uncovered, and bake on the middle rack for 35-45 minutes (or until it's warmed through and the top is golden brown).
  6. Serve warm and enjoy!
