How easy can it really be?

Easy as 1-2-3! Well, to be fair, there are actually about 5 steps to creating these mini-frittatas, but that doesn’t sound as catchy. The basic ingredients you’ll need for this recipe are:


  • Eggs
  • Heavy Cream
  • Salt and pepper to taste
  • (This recipe calls for diced onion as well, but it is not required to make this dish!)

You also have the freedom to add whatever other ingredients you want to create the perfect egg-muffin for you! Cheese, peppers, mushrooms, bacon, sausage, chives, the possibilities are endless!

You’ll want to combine your basic ingredients (the eggs, heavy cream, and salt and pepper) in a bowl and mix well so that your egg mixture achieves a smooth consistency so that your mini-frittatas cook thoroughly and evenly.

Then you’ll just pour your mixture into the prepared muffin tin, either greased or into silicone muffin cups, and add your choice of toppings to customize your mini-frittatas!

After baking in the oven (preheated at 350° F) for 15-17 minutes, you can enjoy these appetizing egg-bites! Or, if you’re looking to save time throughout the week, you can allow them to cool and store them in the refrigerator for easy reheating later during those stressful mornings! 

Simple Mini-Frittata Recipe

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 12 muffins

Ingredients:

  • 12 large eggs
  • 2 Tablespoons heavy cream
  • 2 Tablespoons diced onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional additions: 

  • ¼ cup diced tomato
  • ½ cup shredded mozzarella cheese
  • ½ cup basil pesto 
  • 4 strips of bacon, cooked and crumbled
  • ¼ cup diced mushrooms
  • ⅓ cup diced red peppers
  • 1 Tablespoon minced garlic

Directions:

  1. Preheat oven to 350 and prep muffin tin with grease, non-stick spray, or silicone cups.
  2. Combine eggs, heavy cream, onion, salt, and pepper and mix well.
  3. Divide mixture between cups (less than ¾ full) and add toppings
  4. Bake 15-17 minutes or until center of cups lose the shine on the top of the muffin. 
  5. Remove, enjoy, or store until later in the refrigerator!
