Easy as 1-2-3! Well, to be fair, there are actually about 5 steps to creating these mini-frittatas, but that doesn’t sound as catchy. The basic ingredients you’ll need for this recipe are:
- Heavy Cream
- Salt and pepper to taste
- (This recipe calls for diced onion as well, but it is not required to make this dish!)

Yield: 12 muffins
- 12 large eggs
- 2 Tablespoons heavy cream
- 2 Tablespoons diced onion
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup diced tomato
- ½ cup shredded mozzarella cheese
- ½ cup basil pesto
- 4 strips of bacon, cooked and crumbled
- ¼ cup diced mushrooms
- ⅓ cup diced red peppers
- 1 Tablespoon minced garlic
- Preheat oven to 350 and prep muffin tin with grease, non-stick spray, or silicone cups.
- Combine eggs, heavy cream, onion, salt, and pepper and mix well.
- Divide mixture between cups (less than ¾ full) and add toppings
- Bake 15-17 minutes or until center of cups lose the shine on the top of the muffin.
- Remove, enjoy, or store until later in the refrigerator!
