Ingredients

Steak Marinade

  • 14 ounces sirloin steak, cut into 1-inch cubes
  • 1/2 cup balsamic vinegar
  • 2 Tablespoons honey
  • 1 Tablespoon whole grain mustard
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Tomato Marinade

  • 2 cups whole grape tomatoes
  • 1/3 cup olive oil
  • 2 Tablespoons fresh rosemary (stems removed), chopped

Potatoes

  • 1 1/2 pounds baby potatoes
  • 6 metal or wooden skewers

Directions

  1. Preheat the grill to medium heat and if using wooden skewers, place them in water to soak.

Steak Marinade

  1. In a large bowl, whisk together balsamic vinegar, honey, mustard, and garlic. Season to taste with salt and pepper.
  2. Add the cubed steak and toss to coat. Cover and refrigerate for at least 20 minutes so the steak can marinate.

Tomato Marinade

  1. In another bowl, add the tomatoes, olive oil, and rosemary. Set aside.

Potatoes

  1. Place the potatoes in a large pan and add enough water to cover all of the potatoes by 1 inch. Bring the water to a boil and cook potatoes until they are barely fork-tender, about 8-10 minutes. Drain and set aside.
  2. Grab a skewer and start with a potato, then add steak, then a tomato. Repeat two more times and end with a potato.
  3. Lightly oil the grill and set the kebabs over the heat. Grill for about 5 minutes on each side, or 10 minutes total.
  4. Let cool before serving and enjoy!

Ingredients

  • 1/2 cup balsamic vinegar
  • 2 Tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1/8 teaspoon kosher salt, plus more for seasoning
  • Freshly ground black pepper
  • 2 pounds mixed vegetables (i.e. eggplant, bell peppers, zucchini, red onion, tomatoes, etc), cut into 1-inch chunks
  • 2 Tablespoons olive oil
  • 16 skewers

Directions

  1. If using wooden skewers, place in water to soak.
  2. In a small saucepan, combine vinegar, mustard, garlic, 1/8 teaspoon salt, and a few grinds of pepper and bring to a simmer over medium heat. Simmer, stirring occasionally, until thickened and reduced slightly, about 5 minutes. Remove from the heat.
  3. Prepare a grill for medium-high heat. Meanwhile, place the vegetables and oil in a large bowl, season with salt and pepper in a large bowl, and toss to combine. Thread the vegetables onto the skewers.
  4. Put the kebabs on the grill and cook undisturbed until grill marks appear on the vegetables, about 2 minutes. Using tongs, flip the skewers, and grill 2 minutes more.
  5. Brush the vegetables with the balsamic glaze. Reduce the heat to medium. Flip the skewers every minute or so, brushing the vegetables with the glaze each time you flip them. Grill until the vegetables are cooked through and lightly charred, 10 to 15 minutes total. Brush the vegetables once more with glaze before serving and enjoy!
