Yield: 4 servings
- 4 chicken breast cutlets
- 1/4 teaspoon herbes de Provence
- 1 cup quinoa
- 1/4 cup Champagne vinegar
- 1/4 cup olive oil
- 2 green onions
- 2 Tablespoon Dijon mustard
- 4 cup arugula
- 2/3 cup pitted green olives, quartered
- 12 oz. grape tomatoes, halved
- ½ teaspoon salt, divided
- ¼ teaspoon pepper
- To prepare chicken to be grilled, season with herbes de Provence and ¼ teaspoon of both salt and pepper. On medium-high heat, grill chicken for about 3 minutes per side, making sure it cooks all the way through.
- Begin preparing quinoa according to package instructions.
- To prepare the vinaigrette, place Champagne vinegar, olive oil, green onions, Dijon mustard, and ¼ teaspoon salt into blender and puree.
- Take half of the vinaigrette and combine with cooked quinoa, adding the arugula, tomatoes, and olives. Serve with chicken and drizzle with remaining vinaigrette.
