Five Easy Mid-Week Meals

Five Easy Mid-Week Meals

We know that feeling that you get when the middle of the week comes. You're tired, and it's only Wednesday. You've put 100 miles or more on your car going from practice to practice and school to school. But you still have to find a way to feed your family.

Fear not! We've got plenty of recipes and tips that will help you solve the mid-week meal problem.

First, just know that not every meal has to be a four-course masterpiece. Your kitchen doesn't have to turn into an episode of "Chopped" every time you need to feed everybody. We have lots of different strategies for utilizing leftovers, as well as soups and salads that are fast and easy to prepare.

Second, you need to have a plan going into each week for what you're going to make. Chances are you've already got everything you need to prepare a week's worth of meals, but having a solid plan in place for how to use all of it is a gamechanger.

So, with all of that in mind, here are five of our favorite recipes that will take no time at all for you to prepare on that mid-weeknight.

Bowls

We LOVE bowls at Mealfit. We sell our chicken and rice power bowl and our bama beef bowl as specials on our website every week, but we have a bunch of recipes for bowls on our blog as well. Bowls are great because they're the ultimate example of a solid meal not having to be "pretty". It's just a bunch of good-for-you stuff mixed up together, but it does the job just fine.

Here's our Thai Power Bowl recipe as an example.

And our Mediterranean Power Bowl, too.

    Quesadillas

Quesadillas are amazing. They taste incredible, you can pack in loads of leftovers and simple ingredients, and they're so easy to make. They'll be especially popular with the kids, but there's no reason grown-ups can't love quesadillas too.

Here's our recipe for an excellent black bean and sweet potato quesadilla.

You can order black beans and sweet potatoes from our site, and if you want to add in some extra protein, you can order some shredded chicken, too.

    Pasta

You can get seriously creative with pasta dishes using stuff you probably already have at your house, and they take almost no time at all.

Here is a link to our Lemon Pesto Pasta recipe. It's incredibly fresh, flavorful, and time-efficient.

And for something a little more savory, here's a link to our Creamy Chicken Pasta. It cooks in about 25 minutes and like everything else on this list, it's sure to liven up your midweek meal plan!
